Gamespot has put together a nice piece on how the quality of your Xbox games look on the Xbox 360. The main noticeable difference is the decreased "jaggies" on the edges of graphics. You get higher resolution and better anti-aliasing.
Microsoft plans on releasing updates via Xbox Live and is currently working on the next batch of compatible games.
